Collagen Beauty Breakfast: A Bowl of yoghurt wit fruit, nuts and granola

If I’m being totally honest, I have a bit of a love/hate relationship with granola as I’ve always gone for store-bought and it usually contains lots of added sugar, low quality ingredients and is often quite costly. By making granola myself, I know exactly what’s going in there, having complete confidence with my ingredients.

Adding Beauty Boost to my yoghurt has provided a delightful way to diversify my collagen intake. The sweet raspberry lemonade flavour blends seamlessly with plain yoghurt, transforming it into a delicious and nourishing treat.

Vegan Collagen Blend by Jade and Joy called Beauty Boost

Vegan, gluten free and dairy free!

Ingredients

100g Plant Based Yoghurt

½ Cup Vegetable Oil

2 Tbsp Light Brown Sugar (optional)

1 Tsp Salt

1 Tsp Vanilla Paste

1 Tsp Cinnamon

½ Cup Maple Syrup

4 Cups Gluten Free Oats

½ Cup Cashews

½ Cup Walnuts

Method

For Granola:

  1. Preheat the oven to 180⁰C and line a large baking tray with parchment paper.
  2. Chop up your almonds, pecans, walnuts and cashews into small chunks.
  3. Add oats, chopped nuts, light brown sugar, cinnamon and sea salt and mix together.
  4. Once mixed, add your oil, maple syrup and vanilla paste and mix well until the whole mixture is coated.
  5. Pour your mixture onto your baking sheet and spread into an flat, even layer.
  6. Bake for 12 minutes before bringing out to stir. You want to disturb the mixture to ensure that you get an even bake. Once you’ve stirred, spread your granola out again to an even layer.
  7. Place back in the oven to bake for another 12-15 minutes until golden brown.
  8. Remove from the oven and let your granola cool completely. Once you’ve taken it from the oven, leave undisturbed for around 45 minutes.
  9. One your granola has dried, break it up into pieces using your hands.
  10. Add your dried cranberries and mix together.

For Yoghurt:

  1. Add your yoghurt of choice into a bowl.
  2. Mix in your Beauty Boost and give it a good stir.
  3. Add your desired toppings – don’t forget your granola!

You can keep your beauty breakfast refrigerated for a maximum of 3 days, but we recommend consuming ASAP!
