Super Greens Salad Dressing & Bonus Salad Recipe Recipe

You wouldn’t leave the house undressed, so why should your salad?

Salads are made complete by a good dressing. We’re talking a delicious, homemade dressing that not only tastes amazing, but may even contain a higher variety of superfoods than your salad…

Personally, I love a lunchtime salad, but the only way I can keep up with them is by switching up my dressings every week. I’ve tried every sauce, drizzle and vinegarette under the sun, but never one that contained just as many nutrients (if not more) than my salad. That was until I discovered Super Greens dressing. Super quick, super easy and super green, this recipe took me from a plain old spinach salad to a superfood delight!

Method

Preparing your Salad Dressing Ingredients

Prep your Veg!

We first need to peel and chop your immunity boosting Butternut Squash into rough squares before we get around to seasoning and popping in the oven. There is no need to peel your Beetroot, but you should shop that into rough shapes, too!

Safely halving your Avocado!

If you already followed our Superfood Smoothie Recipe then you should already be up to speed with this, but for those who haven’t gotten around tot hat one just yet, here’s your guide to safely halving your avocado:

  1. Cut Around: Place the avocado on its side on a cutting board. Hold it steady with one hand, keeping your fingers clear of the blade. Slice lengthwise until you feel the knife hit the pit. Then, rotate the avocado, keeping the knife in place, to cut all the way around the pit.
  2. Twist Apart: Put down the knife and hold the avocado with both hands. Twist the two halves in opposite directions to separate them, revealing the pit.
  3. Remove the Pit:Quick tip from an avocado pro – when trying to remove the pip, grab the avocado half pip side up in your hand and gently squeeze. This will pop the pip out without having to use a knife or spoon to pry it out. 
  4. Peel the Avocado: Either peel the skin off with your fingers or use a dessert spoon to scoop out the flesh. Slide the spoon along the inside of the skin to remove the flesh in one piece.

Washing your Spinach

Most shop-bought spinach will be abled as ‘pre-washed’, but as a precaution it’s always best to give them a quick was to avoid any unpleasantness ruining your delicious Salad Dressing! Here’s how:

  1. Wash your hands: 20. seconds of thorough hand washing will have you ready to go!
  2. Remove undesirable leaves: Examine your spinach and discard any moldy, brown or wet leaves – you can use a knife to remove any nasty black spots or holes from otherwise healthy leaves.
  3. Soak the leaves: Put your leaves in a bowl and fill it with cool water – leave it in there for about 5 minutes, occasionally stirring and rubbing the leaves to get rid of any dirt. (TOP TIP: Add some white vinegar to the mix to enhance your cleaning!)

Red Onion Prep

Want to hear a secret about red onions? If you chop them and leave them to soak in water whilst you finish the rest of your salad, it takes away the strong flavour/ smell and gives them a more enjoyable taste and texture!

and finally…

Chop your Walnuts

We will need to chop our Walnuts nice and finely – then leave to one side ready for topping your Salad Dressing!

Lets Make the Salad Dressing:

  1. Place oil, Super Greens, salt, pepper and lemon juice in your jar.
  2. Whisk until everything is combined.
  3. Pour onto your salad. (We told you it was easy!)

Now to Make the Salad:

  1. Preheat your oven to 220⁰C (or you can use your air fryer if you like!)
  2. Chop butternut squash and beetroot before placing on a greaseproof paper-lined baking tray with a splash of salt, pepper and oil.
  3. Place chickpeas on a lined tray with a little oil, peri-peri and garlic powder.
  4. Pop both trays in the oven/ air fryer for around 20 minutes or until the butternut squash is soft throughout.
  5. Place spinach, avocado, red onion on your plate or bowl before adding your bits from the oven.
  6. Top with walnuts and salad dressing and you’re good to go!

Salad with Superfood Super Greens Dressing

Drizzle over a salad of your choice using a spoon or jug!

We recommend consuming ASAP but you can store your Salad Dressing in the fridge in an air tight container for upto 3 days.
