Method
A simple mix of ingredients and you’re good to go! You can personalise these as much as you like. I covered mine with coconut for a little extra texture, but you could drizzle in chocolate for a sweeter snack or leave them plain if that’s how you roll. Let’s get into it!
- Measure oats, milk, peanut butter, maple syrup, chai seeds, vanilla essence and Jade & Joy bars in a bowl.
- Mix until equally combined. (Top tip: Use your hands! The warmth of your hands helps merge the mixture together. It does get a little messy though, so if you’re not a fan, a wooden spoon works well, too!)
- Once combined, split the dough into about 10 equal parts & roll each individual piece of dough in between your palms to make them into balls.
- Sprinkle your coconut onto a plate and roll each ball in the shavings until covered.
And there you have it! High protein snacks to you to nibble on throughout the week.
With recipes like this, it’s absolutely fine to add or take things away depending on your taste. Want less chia seeds? Leave some behind. Fancy adding extra maple syrup? Go for it. Prefer crunchy peanut butter? Weird but ok! 😉
We recommend consuming your freshly made Vegan Collagen Protein Balls on the day you make them, but if you want to keep them for another day then you can keep them in a tupperware box in the fridge for up to 3 days if you like!
