Gluten Free Energy Pancakes with a Mango kick!

I’ve always been a massive pancake fan; in my opinion, they’re hands down the best breakfast option out there! Whether you like them fluffy and light, sweet and indulgent, or savoury with a twist, pancakes offer endless possibilities—what’s not to love? I wanted to try a recipe with less sugar as I’m trying to lessen my sugar intake, which means swapping my usual maple syrup for yoghurt and Energy Burst (no complaints here).

Ingredients
Method
- Pop all dry ingredients in a bowl (flour, baking powder, salt and sugar) and mix.
- Add wet ingredients (milk, water, vanilla paste and oil) until combined. Try not to overmix your pancakes or they may not be as fluffy.
- Heat a large pan over a medium-high heat. Grease pan with vegan butter or oil before adding your mix. Start with 1 pancake and if you’re feeling brave, depending on the size of your pan, you can do a few at a time. Cook until bubbles form on the pancake, then flip. Once the pancake is golden brown, they’re ready. Repeat with all batter.
- Place yoghurt into a bowl before adding Energy Burst. Mix together until powder has dissolved. Chop your mango into bite sized chunks.
- Stack your pancakes onto a plate. Top with yoghurt before adding mango. Add chia seeds if desired. And enjoy!
